Producer Notes: Manually harvested in September, before pressing the grapes were de-stemmed and crushed with no prior maceration, the wine was decanted at low temperature for 24 hours, indigenous yeast fermentation and ageing took place in 225L used French oak barrels. The alcoholic fermentation lasted 45 to 90 days without malolactic fermentation. Aged for 12 months in used oak barrel with the presence of fermentation lees without steering and 6 months in stainless vats prior to bottling. All grapes are from the vineyards aged over 80 years located at 650 to 700 meters in altitude.
Tasting Notes: “What stands out is the beautiful freshness. It does, freshen the palate, and it tastes great. It starts with silky texture and ends with a bit of a bite, especially as it airs out and warms up. Two days later, it is better, arguably brilliant. This should be a great food wine for lighter-styled foods, especially in warm weather, its liveliness enhancing dishes. It should age well, perhaps better than anticipated.”
